Gluten Free Low FODMAP Pizza Recipe

Okay, everyone loves pizza, there’s no denying that. But we all want to eat healthy, right? So here is my version of a healthy, gluten free, and Low FODMAP pizza crust with toppings. This easy and quick recipe is sure to satisfy your craving for hot pizza. Enjoy!

Pizza Crust
3 cups of Bob’s Red Mill 1to1 gluten free baking flour
4 1/2 tsp baking powder
1 1/2 tsp sea salt
1 Tbs coconut sugar
3 Tbs garlic infused olive oil
11 oz warm water

Place all dry ingredients in large bowl and mix well. Place wet ingredients in separate bowl and mix well. Add wet ingredients to dry bowl and mix gently with a spatula, carefully scraping the edges and forming dough into a ball. Gently kneed dough ball with hands for about 5 minutes. Dough ball should be silky smooth and should not require any additional oil or flour. Cover with plastic wrap or other earth friendly covering and place in fridge for at least 10 minutes to chill. While chilling, make pizza toppings (see below or make up your own).

Pizza Toppings
1 lb chicken thighs, skin and bone removed, diced
Green tops of one bunch of green onions, chopped
2 Tbs Italian seasoning
1 cup fresh basil
1 handful of cherry tomatoes, sliced
1 Tbs garlic infused olive oil
A sprinkle of Parmesan cheese.

Heat olive oil in skillet. Add green onion tops and sate. Add chicken and begin to brown. Add Italian season and coat chicken. Remove from heat once chicken is almost cooked all the way through but not overdone.

Preheat oven to 375 degrees. Place pizza stone in oven to preheat. Remove dough from fridge, split into two balls, and place one ball on a piece of parchment paper. Use a rolling pin to roll out dough into a 12 inch round. The other ball can be refrigerated or frozen for later use or go ahead and make 2 pizzas. Once oven is preheated, place pizza dough and parchment paper directly on the pizza stone for 12 -15 minutes. Remove from heat and arrange pizza toppings on top of pizza crust. Feel free to pile them high! Return to the oven for about 10-12 more minutes or until cheese is melted. Remove from oven and enjoy!
