Here is a recipe I created. It is Paleo, Whole30 and Low FODMAP compliant. Enjoy!

Leftover Turkey Soup
• 1 Tbs garlic infused olive oil
• 1 Tbs ghee
• 1 bunch scallions, green parts only
• 2 large carrots
• 2 large ribs celery
• 1 large parsnip
• 1 medium sweet potato
• 1 medium red potato
• 1 Tbs dried rosemary
• 1 Tbs dried basil
• Salt and fresh cracked pepper to taste
• 4 cups cooked leftover turkey meat
• 8 cups turkey or chicken bone broth
• 3 cups spinach
• 1/4 cup fresh parsley
In a large soup pot heat fats. Add scallions and stir. Add carrots, celery, parsnip, and potatoes. Stir. Let them heat until they become slightly tender and fragrant. Add rosemary and basil, salt and pepper. Stir. Add turkey and broth. Bring to a rolling boil and reduce heat to a light simmer. Cover and cook until all veggies and roots are tender. Add spinach and parsley and serve hot or pack in mason jars for the week’s lunches.
Makes 5 large bowls of soup.
